2 T. extra-v. olive oil
3 T. fresh squeezed lemon juice
2 lbs. small zucchini
sliced into 1/2" thick rounds
salt & black pepper
2 ounces feta cheese, crumbled (1/2 C.)
1/4 C. fresh basil
dill, mint, oregano, sage, or thyme leaves. Only use one of above Herbs per each batch.

Preheat oven to 450º . Generously oil a roasting pan or 1/2 sheet pan. In small bowl, whisk together oil and lemon juice. Arrange zucchini in single layer on pan. Brush with oil mixture. Sprinkle with salt & pepper to taste. Roast about 15 min. until zucchini is well browned, turning once. Transfer to serving bowl, add cheese & herbs & toss to mix. Taste then add salt or pepper as needed. Serve hot.
