1 lb. okra pods
2 T. extra virgin olive oil
sea salts

Directions:

Preheat oven 450º lightly oil a shallow roasting pan, or 1/2 sheet pan. Combine okra and oil in large bowl & toss to coat well. Arrange in single layer in pan. Roast for 15 min. until pods are brown. Transfer okra to serving dish. Sprinkle with salt & serve hot.

Look for green or red pods of 2 - 3" long. Avoid larger pods, will be tough & stringy.
Will only keep in refrigerator four days in paper bag.
