1 lb. short pasta
1 T. olive oil
1 lb. sweet Italian sausage- castings removed
2 cloves garlic, minced
2 1/2 c. chicken broth
1/8 tsp. red pepper flakes
1 head broccoli rabe, ends trimmed
4 T. unsalted butter
1 1/2 C. grated Parmesan
1/4 tsp. sea salt, 1/4 tsp. black ground pepper
For milder flavor use broccoli as substitute;
or beet greens, or Swiss chard in place of Rabe.

Cook pasta according to pkg. directions.
Meanwhile, in a large saucepan, over medium heat, put olive oil. Add sausage and cook, crumbling it with a spoon, until browned, about
(5 min.) Add garlic and cook for (1 min.) more. Add broth & red pepper, and bring to boil. Then add the green Rabe or beet greens; which ever you prefer, and cook about (3 min.) Stir in butter & Parmesan and cook, uncovered, until the sauce thickens slightly about (2-min.) Add the drained pasta, season with dash of salt & black pepper, and toss to combine.
