1 T. butter
4 T. onion, chopped fine
1 lg. boiled spud (mashed 1 c.)
3 T. fine dry bread crumbs
1 lb. lean beef
1/3 c. cream
1 tsp. salt
1 egg
1 T. parsley, chopped fine
2 T. butter
2 T. oil
1 T. flour
3/4 c. cream

Directions:
Directions:
In small pan melt butter, add onion, cook 5 min. In bowl mix onions, spud, bread crumbs, meat, cream, salt, egg & parsley. Knead w/hands until well mixed. Shape into 1 in. diam. Arrange in 1 layer on baking, cover w/Saran© wrap & refrig. for at least 12 hrs.

Over high, melt 2 T. butter & 2 T. oil in 10-12 in. skillet. Add meatballs 8 to 10 at a time. Fry on all sides for 8 to 10 min. Put in casserole & keep warm till all are cooked. For sauce, pour off most of oil - add 1 T. flour, add 3/4 to 1 c. cream & cook 2 to 3 min. Pour over meatballs.
