3 quarts water
2 T. salt
2 t. ground black pepper
5 cups steel cut oats or could be called pinhead oats...
(Buy 2 1-lb bags in organic food section at Krogers)
2 lbs ground beef, opt uncooked or cooked
2 lbs ground pork sausage, opt uncooked or cooked
(opt Sage flavor pork)
2 large onions, finely chopped

Optionals:
1-4 Bay Leaves
2 ribs celery w/leaves, finely chopped
Poultry Seasoning to taste
1 beef bouillon cube
1/2 t. Sage
3 t. savory
1 t. garlic powder
1 t. allspice

Directions:
Directions:
Bring water,salt, & pepper to boil.
Stir in steel cut oats.
Cover & cook 90 minutes.
When done, a spoon should stand upright without moving.

In a large bowl, mix beef, pork, & onions.
Stir into the oat mixture & any optionals.
Reduce heat to Low.
Cover & cook 3 hours, stirring occasionally.

Transfer the mixture to a medium baking pan, and cool until semi-solid. Turn out onto wax paper, and chill 1 hour in the refrigerator, or until firm.
We separated into 1-1 lb serving into vacuum seal bag & formed it so it's a round roll tube like. Then placed in freezer.
May also put in loaf pans.

Pull one out & thaw.
Slice into thin slices/patties & fry in skillet with oil or bacon over medium heat until evenly brown.

We like serving with our favorite breakfast foods & pour Maple Syrup over the Goetta.

Opt Meat:
Roasted beef & pork, ground
2 lb pork shoulder
(cook until it falls off bone & grind. Then you can used the strained liquid from this to cook oats.)
