1 lb Ground Turkey or Firm Tofu
2 T Olive Oil
3 Garlic Cloves Minced
1/2 Onion chopped fine
1/2 Green Pepper cubed
3 Stalks of Celery sliced
1/2-1 C of Broccoli Flowerettes and chopped stems
8 oz Can Waterchestnuts drained
1 T + 1 tsp Brown Sugar
1 tsp Ground Ginger Powder
1 tsp Salt
1/8 C Soy Sauce
1/2 C Water

Directions:
Directions:
Cook ground turkey in oil breaking up large pieces. Add onion, garlic, green pepper and celery. Simmer 2 mins. Combine brown sugar, ginger, salt, soy sauce and water. Add to pan and cook till it starts to thicken adding more soy sauce or water as needed. Just before serving add broccoli and waterchestnuts.
Serve over cooked rice or cooked rice spaghetti noodles.
