Spray oil
One can of Cannellini (white) beans
3 cloves of garlic, peeled
2 Tbsp olive oil
sea salt
freshly ground pepper
1 tsp lemon juice (or so)

Directions:
Directions:
Spray cookie sheet with cooking oil spray. Drain and rinse cannellini beans, reserving liquid.
Place beans in single layer on cookie sheet, along with garlic cloves.
Roast for at least 20 minutes, tossing every now and then and adding about 1 Tbsp olive oil as beans seem to need it.
When beans are soft and roasted, put beans in Magic Bullet, a blender, or a food processer with blending blade. Add a bit of olive oil, the juice of half a lemon (or so), grated sea or Kosher salt and fresh ground pepper.
Serve with pita crisps, brushetta toasts, etc.
