2 cups diced, cooked chicken
2 cups chopped celery
1/2 cup chopped pecans or almonds
1 cup mayonnaise or salad dressing
1/2 teaspoon salt
2 teaspoons minced onion (optional)
2 tablespoons lemon juice
1/2 cup grated cheese (Monterey Jack or cheddar)
1 cup crushed potato chips
2 hard- boiled eggs, chopped (optional)

Directions:
Directions:
Combine chicken, celery, nuts, mayonnaise, salt, onion and lemon juice. Spoon into a lightly greased 1-quart casserole dish. Mix together the cheese, potato chips and eggs. Sprinkle over casserole. Bake at 450º for 10 minutes, or until cheese is melted and casserole is heated through.
