1 can pink salmon
2 eggs
1 medium onion
1/4 cup cornmeal
Salt and pepper
1/2 c. flour
Oil to saute in

Dill and Cucumber Topping:
1 cucumber, peeled
2 tablespoons rice wine vinegar
2 tablespoons extra virgin olive oil
2 teaspoons chopped fresh dill
salt and pepper

Directions:
Directions:
Mix salmon (undrained), eggs, onion, cornmeal, salt and pepper. Shape into patties and flour, seasoned with salt and pepper. Heat oil in skillet and saute on each side until golden brown.

Slice the cucumbers lengthwise into thin strips. Combine the cucumbers with vinegar, olive oil and chopped dill. Season with salt and pepper.
