1 ¼ cups sugar
1 pound butter
1 egg
4 ¼ - 4 ½ cups flour
1 teaspoon vanilla

Mix the first three ingredients. Gradually work in 3 cups flour, then an additional 1 ¼ - 1 ½ cups (for a total of about 4 ¼ - 4 ½ cups). Add the vanilla.

Put a portion of the dough into a spritz iron (cookie press) with a small star disk at the end and force it out, making a long rope on a piece of waxed paper. Cut the rope into pieces about 2-2 1/2 inches long. Shape the pieces into S's and O's.

Bake on a greased cookie sheet at 375 degrees about 6 minutes, watching carefully so the cookies don’t get too brown. They’re supposed to be very light in color when done—but not moist.
