5 lbs. red potatoes - cooked with skin on,
5 stalks celery - chopped,
1 large onion - chopped,
1 lb. bacon - cut in 1" pieces,
3/4 cup white vinegar,
1 1/2 cups water,
3/4 cups sugar
1/3 cup fat from bacon,
2 tbsp. flour,
2 1/2 tsp. salt,
1/2 tsp. pepper,
2 eggs - hard boiled

Boil potatoes and while cooking chop celery and onions, set aside. Cut bacon into 1" pieces, fry crisp and set aside saving fat in pan. Add onions to fat and saute. remove onions from fat and remove fat from pan saving 1/3 cup. Return 1/3 cup fat to pan and add flour browning slightly. Add vinegar, water, 1/2 tsp. salt, sugar and pepper. Cook until clear.

Peel potatoes and cut into slices while still hot. Add 2 tsp. salt to hot potatoes. Add sautéed onion, celery, 3/4 of the bacon and sauce to potatoes. Mix gently but thoroughly. Slice hard boiled eggs and use for garnish along with the rest of the bacon Maybe a little parsley. Allow to rest at room temperature for at least a couple hours to let flavors blend.
