2 cups grated zucchini (unpeeled)
2 cups sugar
1 cup oil
3 cups flour, sifted
1 tsp cinnamon
3 tsp vanilla
1 tsp salt
1/4 tsp baking powder
1 tsp soda
3 eggs, beaten

Directions:
Directions:
Mix ingredients as you would a cake. Put eggs in last. If desired, add 1/2 cup nuts chopped.

For topping: Mix brown sugar and cinnamon and sprinkle on batter before baking.

Bake 1 hour at 325º
