1/2 cup butter (1 stick)
1 cup flour
2 T sugar
1 pinch salt

2 eggs beaten
1/4 cup flour
1 cup sugar
1/2 tsp. baking powder
1/2 cup coconut
1small bottle maraschino cherries, drained and quartered
3/4 cup pecans, chopped
1 tsp. vanilla

Directions:
Directions:
Mix the top ingredient group and press on the bottom of the baking pan like a pie crust. It does not need to be perfectly smooth.
Bake for 10 minutes at 350 degrees in 9 x 11 pan

Mix second group of ingredients together and pour over the baked crust.
Bake at 350 degrees for 30 minutes - don't overcook, watch for slightly browning surface, the toothpick check works well. Let sit for an hour before cutting.

We usually double this recipe.

This has become my favorite dessert bar of all time. In a moment of insanity I wanted more people to know how wonderful they are and signed up to make 90 bars (2"x2") for the Annapolis Rotary Crab Feast fundraiser in 2008. For the Crab Feast in 2009, I was more sane and brought something faster to produce, but people remembered and asked for the Maraschino Cherry Bars! Hmm, maybe in 2010...
