5-6 lb roast
½ tsp salt
¼ tsp pepper
2 tbsp flour
2 tbsp oil
1 onion cut into quarters
1 bay leaf
½ tsp thyme
1 tbsp parsley flakes
1 or 2 beef boullion cubes
1-2 cups water
4 carrots cut into 1 inch pieces
4 potatoes cut into quarters if medium to small

Directions:
Directions:
Mix salt, pepper and flour and coat beef with mixture. Heat oil in electric frying pan to medium hot. Brown beef on both sides. Add next 4 ingredients along with 1 boullion cube and a cup of water. Turn electric frying pan down to low, allowing liquids to simmer for 2 ½ hours. Continue to add water as needed to keep moisture level to where meat is 2/3s in the water. If adding more than a cup of water, add another bullion cube. Add carrots and potatoes for last 45 minutes of cooking. Remove meat and vegetables, turn up the heat and add flour and water mixture to thicken, stirring while adding. (Sometimes I just use the natural juices instead of thickening,)
