3 oz. fresh Mozzarella cheese (cut into small cubes)
1 c. thinly sliced cucumber
1 tomato cut into chunks
1/2 c small purple onion thinly sliced and separated into rings
1/2 c red or green sweet pepper slices
1/2 c pitted black olives
1 recipe Hirtensilat Dressing

Directions:
Directions:
Combine vegetables. Toss with dressing. Add cheese.

Hirtensilat Dressing: 2 T. olive oil, 1 T fresh parsley, 1 T red wine vinegar, 1 tsp Dijon -style mustard, a pinch of each of the follow, sugar, pepper, onion salt, garlic salt and paprika. Mix well. Makes 1/4/cup
