1/4 c. butter
1/3 c. flour
3/4 t. salt
1/8 t. pepper
1 1/2 c. milk
2 cups prepared rice
1 c. chicken broth
2 c. chicken, cooked
3 oz. mushrooms
1/3 c. green pepper
1/4 c. almonds
2 T. pimientos
If desired, shredded carrots or water chestnuts

Sauce: Melt butter in pan on low heat. Add flour, salt & pepper; stir well to combine to make thick paste. Remove from heat. Add milk and chicken broth. Mix by whisking together to combine. Heat up to medium heat and cook for five minutes to thicken, stirring intermittently. Add: cooked chicken, cooked rice mixture, mushrooms, green pepper, almonds, pimientos, shredded carrots, water chestnuts. Add mixture to sprayed 9x13 pan. Cover with tinfoil. Bake at 350º for 1 hour.
