1 (14 oz.) can artichoke hearts - drained and chopped
1 (8 oz.) container of low fat plain yogurt
1/4 c. green onion - chopped
2 T. red pepper - chopped
1 (10 oz.) pkg. frozen chopped spinach - thawed and drained
1 c. (4 oz.) part-skim mozzarella cheese
1 garlic clove - minced

Directions:
Directions:
Combine all ingredients except red pepper and mix well. Pour mixture into 1 quart casserole dish or 9" pie plate. Bake at 350º for 20-25 minutes or until heated through and sprinkle with red peppers.
Served with toasted bread and whole grain crackers.
