1 1/4lb ground turkey
1 tsp adobo
1/4 tsp ground cumin
1/4 tsp ground bay leaf
3 tbsp sofrito (see recipe under misc. category) or use store bought sofrito located in the Latin food section.
1 tbsp tomato paste
6 large green olives
1 tbsp capers
2 tbsp raisins (optional)
1 tbsp olive oil

Directions:
Directions:
Combine turkey, adobo, cumin, bay leaf, sofrito and tomato paste in a mixing bowl. Mix together as though you are making a dough. Add capers and olives.
Heat oil in skilled over medium heat. Add turkey mixture and mash with a potato masher until it is loose. Cook for 8-10 minutes, just until the turkey is done; be careful not to over cook it or it will be dry.
Remove from the heat, stir in the capers and raisins, and serve over white rice. Garnish with red pepper strips and green peas.
