8 c. squash - diced
1 stick butter
1 can cream of chicken soup
3 1/4 c. carrots - grated and diced
1 sm. tub of sour cream
1 c. onion - minced
1 sm. jar pimientos
1 box Stove Top cornbread stuffing
cheddar cheese - grated

Directions:
Directions:
Cook squash in salted water and drain. Grate and mash your cooked squash.
Saute minced onion in butter but do not drain.
Mix ingredients except cheese and spread in a casserole dish. Sprinkle cheddar cheese over top and cover with foil. Bake at 350º for 40-45 minutes.
