6 to 6 1/2 cups bread flour
1 cups sugar
1 teaspoon salt
1/4 teaspoon cardamom
2 packages yeast
1 cup milk
1/4 cup water
1/2 cup butter
3 eggs
1/2 teaspoon vanilla extract
Topping

1/4 cup sugar
1/3 cup flour
1/2 teaspoon nutmeg
2 tablespoons butter softened

1. Grease two 8 inch pie pans. In large bowl combine 2 cups flour, 1 cup sugar, salt, cardamom and yeast; blend well. Warm milk to 120 to 130 degrees on stove or in microwave. Add warm liquid, eggs and vanilla to flour mixture. Blend at low stead until moistened, beat 3 minutes at med speed. by hand, stir in 3 cups flour, to form stiff dough. Knead in 1 to 1 1/2 cups flour until dough is smooth and elastic, about 10 minutes. Place dough in greased bowl, cover loosely with plastic wrap and let rise in warm place until light and doubled in size about 1 to 1 1/2 hours.
2. Punch dough down, allow to rest for 15 minutes. Divide dough in half; mold into balls. Form into round balls; place in prepared pans. Cover; let rise in warm place until light and doubled in size- approx 1 hour.
3. Heat oven to 350 degrees. Combine topping ingredients until crumbly; sprinkle over dough. Bake for 35 to 45 minutes or until loaves sound hollow when lightly tapped. Remove from pans immediately and cool on wire racks. 2 loaves.
