1 lb. Velveeta cheese - 3/4 cubed, 1/4 thinly sliced
1 stick butter - sliced
5-8 red (new) potatoes - bite size cubed
4-7 slices bacon - semi-cooked in microwave
1 lg. can cooked carrots - drained and diced
1 sm. can green chilies
salt to taste
pepper to taste

Directions:
Directions:
Put potatoes into large bowl with diced carrots and green chilies. Add the cubed cheese and salt and pepper to taste and combine all together.
Grease baking dish with cooking spray and preheat oven to 350º.
Line bottom of dish with strips of bacon right next to each other. Place a couple of slices of butter on top of bacon strips. Put half of potato mixture and then layer it with some slices of butter. Pour the rest of the potato mixture in and put rest of butter slices on top.
Bake until potatoes are done and soft or about an hour.
After potatoes are done, cover top with sliced Velveeta and cook until cheese is melted.

This recipe can be sped up by semi-cooking the potatoes on the stove in boiling water. Also make this dish a full meal by adding browned ground beef.
