6 medium baking potatoes
1 lb. ground beef
2 T. chopped onion
1/3 c. sour cream (in Spain Quark is fine)
1 T. soy sauce
1 tsp. salt
1/2 tsp. garlic powder
3/4 c. shredded cheddar

Directions:
Directions:
Bake scrubbed potatoes at 350º F for 1 hour or until done. Cool. While cooling, cook beef and onion; drain. Cut a thin slice off the top of the potatoes. Carefully scoop out pulp leaving a thin shell. Place potato pulp in a bowl and add sour cream, butter, soy sauce, salt and garlic powder. Mash or beat. Stir in meat mixture. Stuff in shells and put small amount on top (cut off) part. Sprinkle with cheese. Bake at 350º F 10-15 minutes. Broil for a minute to “crisp” cheese if desired.
