2 cups macaroni cooked
2 tbsp grated onions
1 tsp salt
1/4 tsp pepper
3 cups shredded cheese (2 cups cheddar and 1 cup Monterey Jack)
1 Tbsp butter

Sauce
2 Tbsp butter
2 Tbsp flour
1/2 tsp salt
1/4 tsp pepper
2 cups milk

Directions:
Directions:
Preheat oven to 375º. Grease 2 qt. casserole dish. Cook macaroni and set aside. Prepare sauce, melt butter and blend in flour. Cook until smooth and stir in milk Bring to a boil and cook for 1 minute.
Place 1/2 of macaroni in casserole dish. Sprinkle with 1/2 grated onion, 1/2 salt and pepper and half of cheese. Pour half of sauce over macaroni. Repeat steps topping with cheese.
Bake 30 minutes covered and an additional 15 minutes uncovered.
