1 1/2 c. vegetable oil
2 c. brown sugar
3 eggs
3 c. flour (half white and half whole wheat)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
2 tsp. vanilla
3 tbsp. water
3 c. finely chopped apples

Preheat oven to 350º.

Beat oil and sugar until creamy. Add eggs one at a time and mix well. In separate bowl combine all dry ingredients. Add dry ingredients to egg mixture along with vanilla and water and mix till smooth. Fold in chopped apples.

Spoon into paper lined (or greased) cupcake pan. Fill each cup about 2/3 full.

Bake for 25 minutes.
