Pie Crust:
1-1/3 cups flour
1/2 tsp. salt
1/2 cup Crisco
3 tbsp. tap water

Filling:
1 cup sugar
3 tbsp. flour
3 egg yolks, reserve whites for meringue
1 can (No. 2) crushed pineapple
1 cup milk
2 tbsp. butter

Meringue:
3 egg whites
Dash cream of tartar
3 tbsp. sugar
1 tsp. vanilla

Directions:
Directions:
For the crust, in a bowl using a pastry blender mix flour, salt and Crisco until mixture looks like peas. Add water and mix. Flour hands and using a pastry cloth, roll dough into ball. Roll it out for crust. Place in a pie plate, scallop edges and fork crust. Bake at 425 degrees until brown. For the filling, in a saucepan mix sugar and flour. Add egg yolks, pineapple, and milk. Stir over heat until thickened like pudding then add butter. Remove from heat and let cool. Fill baked pie crust with mixture. For the meringue, beat egg whites in bowl, add cream of tartar, sugar and vanilla until it stands in peaks. Spread on top of pineapple filling. Place in oven and bake at 350 degrees until the meringue browns.
