3/4 pound sharp cheddar cheese, shredded
1 pound lean bulk pork sausage (optional)
5 slices firm white bread (or sour dough)
4 eggs
2 cups milk
3/4 tsp. chile powder
salt
4 oz. can diced chilies

Directions:
Directions:
In large frying pan, brown sausage; drain excess fat and set meat aside. Lightly butter one side of white bread and cut into 1/2 inch cubes. Sprinkle half the bread cubes evenly in the bottom of a buttered baking dish (7x11) Sprinkle with half the cheese and half the chilies, cover with the sausage. Then top remaining bread cubes, cheese and chilies.

Beat together 4 eggs, 2 cups milk, 3/4 teaspoon each salt and chile powder. Pour evenly over bread. Cover tightly and chill overnight or at least 8 hours.

Place baking dish, uncovered, in a 350 oven; bake for about 1 hour or until golden brown and set in the center. Let stand for 10 to 15 minutes before serving.

Makes 6 to 8 servings. Make 1 1/2 recipe for 12 people, using a 9 x 13 dish.
