1/3 c chopped, peeled parsnip
1/3 c diced potatoes
1/4 c chopped green onions
1/4 c chopped carrot
1/4 c chopped celery
2 tsp olive oil
1 can (14 1/2 oz) vegetable broth
1 c canned tomatoes
1/3 c dried lentils, rinsed
1/4 c dry red wine
1 tsp worcestershire sauce
1 bay leaf

Directions:
Directions:
In large saucepan, saute veggies in oil 3 minutes. Add the broth, tomatoes, lentils, wine, worcestershire sauce, & bay leaf.
Bring to a boil. Reduce heat; cover and simmer 25-30 minutes.
