1 cup quick oatmeal
1-1/4 cups boiling water
1/2 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp. vanilla
1-1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

topping:
6 tbsp. oleo
1/4 cup cream or carnation evaporated milk
2/3 cup brown sugar
1/2 cup chopped nuts
1-1/2 cups coconut

Directions:
Directions:
Pour 1-1/4 cup boiling water over 1 cup quick oatmeal and let cool.
Cream together ½ cup shortening, 1 cup brown sugar and 1 cup white sugar.
Add 2 beaten eggs, cooled oatmeal mixture and 1 teaspoon vanilla.
Sift together 1-1/2 cup flour, 1 teaspoon each of – soda, salt, and cinnamon.
Add to first mixture and blend well. Pour into a 9x13 pan and bake at 350 degrees for 30 to 35 minutes.

Pour this topping over cake while still hot.
Heat on the stove:
6 tablespoons oleo
1/4 cup cream (I use carnation milk in the small can)
Melt together, blend in until smooth:
2/3 cup brown sugar
Remove from stove and
Add:
1/2 cup chopped nuts
1-1/2 cups coconut
Frost the cake!! And enjoy.
