1 cup sugar
¾ cut shortening
1 egg
¾ cup mashed cooked carrots
1 teaspoon vanilla
1 teaspoon baking powder
¼ teaspoon salt
2 cups flour

Directions:
Directions:
Cream together the shortening and sugar. Add egg, carrots, and vanilla to shortening mixture. Blend flour, salt and baking power, add these dry ingredients to above. Drop by teaspoon onto a cookie sheet and bake 350 degrees for about 15 minutes.


Frosting for the carrot cookies:
Grate the rind of an orange. Use the juice of that orange and add it to powdered sugar and add a teaspoon of oleo. Mix well. Frost the cookies and sprinkle a little of the grated rind on top of each.
