2 c. Panko Bread Crumbs
1 c. grated Parmesan Cheese
4 tbsp. olive oil, divided
2 tbsp. minced Fresh Thyme Leaves
Kosher Salt and Black Pepper
1/4 c. Dijon Mustard
2 tbsp. water
2.5 lb. chicken breasts

Preheat oven to 400º. Line baking sheet with heavy-duty foil. Place a cooling rack over the pan and spray the rack with Cooking spray. Set aside.

In a shallow dish, combine bread crumbs, Parmesan cheese, 2 tbsp. olive oil, thyme, salt and pepper. In a separate shallow dish, combine mustard, water, salt, pepper and remaining oil.

Coat each chicken breast with the mustard mix and dredge each in the bread crumb mix. Place on rack and back 25-30 minutes.
