1 T. oil
3 c. sliced celery
2 c. diced potatoes (about 1 lb)
1 c. chopped onion
1 t. dried minced garlic, or 1 clove fresh minced garlic
2 cans (~14oz each) chicken broth
1 c. low-fat milk
1 T. Dijon-style mustard
½ c. shredded Cheddar cheese

Directions:
Heat oil in large saucepan over medium-high heat until hot. Add celery, potatoes, onion and garlic; cook and stir about 5 minutes or until celery is crisp-tender. Add broth and bring to a boil. Reduce heat and simmer, uncovered, about 10 minutes or until potatoes are fork-tender. Place half of the soup mixture in food processor or blender and process until smooth. Pour processed soup back into saucepan with remaining soup mixture. Stir in milk and mustard. Heat 1-2 minutes or until hot. Serve topped with shredded cheese.
