¾ c. seasoned bread crumbs
¼ c. all-purpose flour
1 t. paprika
1 t. poultry seasoning
1 t. onion salt
1 t. garlic powder
½ t. dried thyme
¼ t. black pepper

1 T. and 1½ t. oil
4 whole chicken breasts (8 split breasts, about 4 lbs)

Preheat oven to 400F. Combine bread crumbs, flour, paprika, poultry seasoning, onion salt, garlic powder, thyme and pepper in a shallow dish. Stir with a fork until well blended. Add oil gradually, stirring with fork to blend well. Remove skin from chicken, then moisten chicken with water and roll in breading mixture to coat. Place chicken in single layer in a baking dish sprayed with non-stick cooking spray. Sprinkle any remaining breading mixture over chicken. Bake for 30 min or until chicken is cooked through (no longer pink in center and juices run clear).

: I like to use boneless, skinless chicken breasts but this breading works well on bone-in chicken and even pork chops (adjust cooking time). Double or triple the recipe when making a batch of breading (step 2 only) to store in your pantry. Take out only what you need and add oil as needed (ie only 4 split breasts: take out approximately ½ c of premixed breading and add approximately 2 t. of oil)
The oil and high temp really make this chicken crispy on the outside and juicy on the inside
