1 spaghetti squash (medium)
1 T. butter
2 cloves garlic, minced
2 large leaves of fresh basil, minced (or 1 t. dried basil)
1 t. dried oregano

Directions:
Directions:
Poke squash with fork and microwave for 5-10 minutes until soft. Cut squash in half and remove seeds. In microwave-safe baking dish, microwave (cut-side down) in ~¼ inch of water for 5-10 min or until cooked through. Scrape squash halves with fork to shred into “noodles”. Heat butter in non-stick skillet. Add squash “noodles”, garlic, basil and oregano and sauté for ~5 min. Serve immediately.

In step 6 add julienned zucchini, carrots, onions, etc or pine nuts or walnuts and sauté until tender-crisp. Also, try other herbs instead of the basil and oregano, such as sage, thyme or marjoram.
