1 ham hock
1 pkg. frozen black eyed peas
1 can chicken broth
1/2 white onion, chopped
1/8 tsp. ground black pepper
garlic salt
parsley, chopped
Tabasco pepper sauce, to taste

Directions:
Directions:
Prepare black-eyed peas per package directions using 1 can chicken broth instead of 1 cup water. Add onion, garlic salt, black pepper, parsley and Tabasco sauce. Add additional water as desired.

Cover and simmer.

I serve black-eyed peas on New Year's Day because tradition says they bring "good luck" or "prosperity" for the new year!
