4 c diced potatoes
2 c celery
2 c onions
2 grated carrots
Chicken Stock
3/4 c butter
3/4 c flour
3 t sugar
3 t salt
1 t pepper

Directions:
Directions:
Put potatoes, celery, and onions in a saucepan and pour chicken stock to just cover. Bring to a boil and boil for 5 minutes.

In a soup pot, melt butter and then add flour. Stir constantly until it boils. Cook for 3 minutes while you stir.

Add seasonings and half and half. Simmer until smooth and bubbly. Turn down to low and add veggies (juice and all) then add grated carrots. Cook just till carrots start to get soft.

Serve and enjoy!

If necessary, you can thin the soup with tepid milk. Be careful, it can curdle.
