2 tbsp olive oil
2 leeks, including the tender green part, finely chopped
1 1/2 lb. broccoli, trimmed, florets and stalks cut into 1 inch pieces
4 cups chicken broth

Directions:
Directions:
In large soup pot over medium heat, warm oil. Add leeks and saute until softened, 3 to 5 minutes. Add broccoli and continue to saute, stirring frequently until slightly softened, about 2 minutes longer.

Add the broth and bring to a simmer over medium heat. Cover partially and cook until vegetables are softened when pierced with a knife, 15 to 20 minutes. Remove from heat.

In a blender or food processor, puree the soup in batches until smooth. return to pot a reheat on medium heat. Season to taste.
