Chicken Enchiladas Recipe

5-6 chicken breasts
1 large can of green enchilada sauce
1 small can of sliced olives (optional)
corn tortillas
Cheese- preferably a mix of cheddar and monterey jack

Directions:
Directions:
Boil chicken, cool then shred. Take oil and warm it in a pan, add corn tortillas and lightly brown them in the oil. Take the enchilada sauce and warm it in a saucepan. After the tortilla has been fried dip it in the pan of enchilada sauce. Place the tortilla in a 13x9 in. baking dish. Place chicken, olives (optional) and cheese in the middle of the tortilla and roll in up. Do these steps to create several rolls of enchiladas. If you have extra chicken sprinkle it on top of the casserole. As well, sprinkle extra cheese on top of the casserole. Place in the oven on 350º for 30 minutes or until cheese is melted.

To eliminate frying the corn tortillas I prefer to place the tortillas on a paper plate with a wet paper towel on top and warm them until they can be rolled without breaking.
