5 c apple juice
7 ½ c sugar
1 pouch Certo
½ t butter
1 dram cinnamon oil
1 dram red food coloring

Directions:
Directions:
Stir sugar into fruit juice in a large sauce pot. Add ½ t butter to reduce foaming if desired. Bring mixture to full rolling boil (a boil that doesn't’t stop bubbling when stirred) on high heat stirring constantly. Stir in pectin quickly. Return to full rolling boil and boil exactly 1 minute stirring constantly. Quickly add 1 dram of cinnamon oil and 1 dram of red food coloring. Remove from heat. Skim off any foam with metal spoon.
Ladle quickly into jars. Wipe jar rims and seal.
Process 5 minutes in rolling water bath. Remove jars and place on a towel to cool completely.
