2 1/2 C Spaghetti Sauce with or without meat
12 oz Tinkyada Gluten Free Brown Rice Penne Noodles
6 oz Shredded Italian or Mozzarella Cheese
1 tsp Basil
4-6 handfuls of washed and destemed Spinach
Opt: coarsely chopped Olives
Opt: cubed Pepperoni

Directions:
Fill boiling pan 3/4 full of water. Add noodles when it reaches a calm boil. Cook 10 mins. Drain and soak in cold water till ready to use. Grease baking dish you will cover. Saute spinach in olive oil. Cover bottom of baking dish with 1/2 of the sauce, 1 tsp basil, and optional pepperoni, add 1/2 of the drained noodles, top with all of the spinach, optional olives and 1/2 of the cheese. Add remaining noodles, remaining sauce, and remaining cheese in that order. Cover with lid or foil and bake at 350º 30 mins.
