2 c. sugar
3 eggs
1 c. oil
2 c. grated carrots
1 3/4 c. crushed pineapple in juice

2 1/4 c. flour
1 t. salt
2 t. cinnamon
2 t. soda

1 c. chopped nuts,
1c. coconut
1c. raisins
1 t. vanilla

Directions:
Directions:
Mix sugar, eggs, oil, carrots and drained pineapple.
Add flour and spices, mix until blended. Stir in nuts, coconut, raisins and vanilla.
Bake at 350º for 45 min.

When cool frost with...8oz. cream cheese and 1/2 c. butter mixed, add 1 lb. powdered sugar and 1 t. vanilla. Beat well

The frosting is very rich and sweet. Almond can be substituted for the vanilla.
