1 lb Owens or Jimmy Dean country sausage
1 lb cubed or shredded Monterrey Jack cheese
1 4oz can chopped mushrooms, drained (optional)
1 15oz can chopped tomatoes, drained (optional)
¼ t black pepper
½ t salt
1 small can of evaporated milk
6 eggs beaten
1 lb of chopped or shredded cheddar cheese

Directions:
Directions:
Butter a 9”x13” dish.
Place Monterrey jack cheese in dish.
Crumble sausage and cook until done, drain well and spread over cheese. Spread drained mushrooms over meat. Spread drained tomatoes over mushrooms. Mix the beaten eggs, milk and seasonings. Pour over the above ingredients in pan.
Place chopped or shredded cheddar cheese over all.

Bake 350 degrees for 40 – 50 minutes or until set.
