1 c flour
2 eggs
1 T cooking oil
1/4 t salt

In a blender combine ingredients in the order given. Blend until well mixed. In a lightly oiled skillet pour a thin layer of batter. Lift and tilt the skillet to spread the batter. Return skillet to heat, when ready flip and if desired cook crepe on the other side. Keep the skittle oiled (I re-spray the pan with Pam about every three crepes)

Crepes can be filled with many things and used for many different occasions. In the Austrian tradition of my father we eat the traditional Poly Shieken. The crepes are filled with yogurt, cottage cheese and/or fruit,rolled and then topped with whipped cream, nuts and a sprinkle of powdered sugar.
I quadruple the recipe for my family of ten and have learned that men have a talent for making the crepes.
Freeze extra crepes with wax paper in between.
