2 acorn squash halved pole to pole and seeded
4 tablespoons unsalted butter
4 tablespoons dark brown sugar
nutmeg
cinnamon

Directions:
Directions:
Place (inside up) in a jellyroll plan with a little bit of water added. Bake about 40 to 45 minutes at 350º or until knife inserted reveals doneness. Remove and set oven to broil.

While squash is cooking, melt butter, brown sugar, cinnamon, nutmeg, and salt . Spoon portion of butter/sugar mixture onto each squash half. Broil until carmelized.

You may also just add all spices before baking and not put under broiler.

These are really impressive and colorful, especially served with Cornish game hens and wild rice. It's a fun meal to fix in fall in Oklahoma when all the leaves are changing.
