2 lbs. yellow squash (or a combination of yello, zucchini and white summer squash)
1 medium onion, chopped
1/2 c. sour cream
2 eggs, beaten
2 T. butter, melted
2 T. sugar
1/2 c shredded cheddar cheese (or use Mexican cheese for extra flavor)
1 tsp. salt
Pepper to taste
1 c. cracker crumbs, divided

Directions:
Directions:
Cook squash and onion in small amount of water until tender Drain. Mix sour cream, eggs, butter, sugar, cheese, salt, pepper and 1/2 c. of the cracker crumbs. Place in buttered 2 quart shallow baking dish. (use 9 x 13 pan for double recipe) Bake for 15 minutes at 350º F. Remove from oven, cover with remaining cracker crumbs, and bake an additional 15-20 minutes.
