California Frittata Recipe

1/2 onion; minced
2 T butter
1/2 c mushrooms; quartered
1/4 c Monterey jack cheese
6 whole eggs
1/2 c cream
1/2 c Dry white wine
1/2 t salt
1/2 t white pepper

Saute onions and mushrooms for 3 minutes. Add white wine. Set aside.
Beat eggs and cream. Add cheese. Combine with wine, onion and mushroom mixture. Add salt and pepper
Place in 8" round Pyrex pan. Bake at 350 for about 20 minutes.
