1 1/4 cup Bran cereal
3/4 tsp. flour
3/4 cup wheat flour
1 1/2 tsp. baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2/3 cup skim milk
2 large eggs
1/2 cup brown sugar
1/3 cup vegetable oil
3/4 cup grated carrots
3/4 cup raisins

Mix Bran cereal, flour, baking powder, baking soda, salt and cinnamon in a bowl. Make a well in the center of the dry ingredients.

Mix milk, eggs, sugar, and oil in a separate bowl. Add carrots and rains. Pour into center of well of dry ingredients, and mix with spoon. Put into greased muffin tins or cupcake papers, let rest 5 min. Bake at 375 16-18 min

You can use all wheat or all white flour if you desire. Anything can be added: craisins, nuts etc
