6 Hard cooked eggs, peeled 5 T mayonnaise 1 t vinegar 1/4 t dry mustard 1/4 t salt + dash of pepper 2 t minced onion (optional)
Cut eggs in half. Remove yolks. Press yolks thru sieve. Add all other ingredients and mix well. Fill egg whites with mounded yolk mixture. Top with a sprinkle of paprika and/or a slice of olive or a sprig of parsley.
