Ingredients:  
3 lb. potatoes – cubed and cooked until tender (be careful – overcooking will make a mushy casserole).
About 2 cups of cheddar cheese – grated
1/4 cup butter, melted
1 1/8 tsp. salt
1/4 tsp. pepper
1/3 chopped green onions
8 ounces sour cream
1/8 tsp. cayenne pepper
1/2 cup bread crumbs
2 T butter

Directions:
Directions:
Drain potatoes and carefully add cheese, melted butter, salt, and pepper. Combine onions, sour cream, and cayenne pepper. Stir. Add to potatoes, again stirring carefully. Place in a buttered baking dish. Top with bread crumbs and dot with butter. Bake uncovered for 25 minutes in a 325º oven.
