2/3 c. sugar 1/3 c. soft shortening 2 eggs 3 T. buttermilk (or soured milk) 1 c. mashed bananas 2 c. flour (sifted) 1 t. baking powder 1/2 t. baking soda 1/2 t. salt
Mix together sugar, shortening and eggs. Stir in milk & bananas. Sift together dry ingredients and stir in. Pour into well greased 9x5x3 loaf pan. Let stand 20 minutes. Bake @ 350º 50-60 minutes, until toothpick inserted in center comes out clean.
