olive oil
sea salt
fresh lemon
hot side dishes

Cut the salmon into thin slices (the same as you would to cut a cake into two layers). So instead of having one thick filet, you have two thin filets - at a smaller "height". (make sense?)

Throw a little sea salt on them.

Heat a griddle pan until smoking hot. Quick rub around some olive oil. Place the fish FACE DOWN.

Count 1 1/2 minutes.
Flip over with a large spatula.
Count 1 1/2 minutes.

With a fork, check the thickest area -- is it opaque all the way through?

Put it on a plate and serve. This happens so quickly - this is why you have to have your hot side dishes already on the plate and ready to serve!

Top with fresh lemon juice.

This is a surprise meal. If you get a really good piece of fresh salmon, this is the best way to cook it. Enjoy!
